I checked for different versions online and I found one which seemed simple enough, adapted it and voila this is now the official recipe for Suya Chicken in my house.
Why chicken, you ask? Well, I prefer the moistness of the meat and it’s much easier to handle; I ‘m not yet ready to cut those beef pieces kebab style. Honestly, you will enjoy making and eating these goodies. Marinating the meat for a while if probably overnight is the key to get truly delicious and well spiced chicken. In addition, the yogurt (please use plain unsweetned yogurt, unless you want to eat vanilla or strawberry tasting suya chicken ;)) adds an extra level of moistness to the chicken.
If you don’t have all the dry ingredients, you can blend fresh ingredients instead and marinate the chicken that way. So let’s dive into the recipe.
NIGERIAN SUYA CHICKEN RECIPE

- 12 chicken pieces, drumsticks,thighs etc.

- 4 heaped tablespoons suya spice
- 1 tablespoon dry thyme
- 1 teaspoon curry powder

METHOD
- Thoroughly combine and mix all the ingredients with the chicken pieces (except the salt and half of the suya spice (i.e 2 tablespoons)) and let sit and marinate for at least 2 hours or overnight in the fridge
- Preheat oven to 375F and line an oven tray with foil or parchment
- Arrange marinated chicken skin side up in tray. Bake for 40 minutes
- Remove tray from the oven and make 2 to 3 incisions all along each chicken piece. Sprinkle on the leftover suya spice
- Increase oven temperature to 425F; return chicken to oven and cook for another 10 minutes
- Enjoy with a cold drink like zobo
