I must confess that I was a bit skeptical when I first came across the spicy mango chicken wings recipe, because I only enjoy having mangoes in smoothies or desserts. However, I could not resist the look of the finished product and so I decided to try it out for myself. I was so glad I made the choice – as in this dish is a blend of all sorts of lip smacking flavours. Then there’s the aesthetic aspect as well – your tastebuds will long to experience the richness of colour and shine of the juicy marinade and the fragrant aroma that wafts up your nostrils.
Another thing I love about this recipe is that it’s really easy to make, the ingredients that you use don’t require a lot of complexity in preparation. Make sure the mango you use is ripe at best and overrripe at least – Unripe mangoes will not work.
If you would like to have a more compact coating, you can mix the spices you season the chicken with in STEP 1 with some flour and then bake. Nevertheless, whether you coat the wings in seasoned flour or just the spices alone, they’ll still end up tasting decadent.

INGREDIENTS
- 2 to 2.5 pounds chicken wings (about 10 to 12 pieces)
- ½ to 1 teaspoon chili powder
- ½ to 1 teaspoon salt
- ½ to 1 teaspoon garlic powder
- ½ to 1teaspoon black pepper
- ½ to 1teaspoon paprika
- 2 seasoning cubes, Knorr or Maggi
- 2 garlic cloves
- ¼ small onion, optional
- A handful of parsley or any other fresh herb, optional
- 3 hot peppers, habanero or scotch bonnet
- 1 large ripe mango, skinned and deseeded
- ¼ cup honey
- ¼ cup apple cider vinegar
METHOD
- In a medium bowl, combine chicken wings, salt, black pepper, chili powder, paprika, and garlic powder; Mix everything thoroughly using your hands or a spoon.
- Cover chicken in a bowl with cling wrap or foil wrap or place in a ziploc bag and let marinate for at least 30 minutes.

- While chicken is baking, combine mango, apple cider vinegar, hot peppers, onions, garlic and fresh herbs in a blender; blend to form a smooth paste.

- In a frying pan, on medium heat, add honey and mango puree; simmer for about 2 to 3 minutes or until it starts to bubble.
- Pour sauce over chicken wing pieces in baking pan or put pieces in pan and mix in with sauce. You can save the excess sauce for dipping
- Return wings to oven and bake at 425F for 5 to 10mins.
Serve with leftover sauce and Enjoy!!!
