Bonjour my dear blog family and friends and Happy Children’s Day in arrears to all my readers with children of their own and the soon to be parents:) I had some extra time over the weekend to make some dishes and take photos for the blog (so look forward to many more interesting & delicious recipes in the coming months:) For today, I’m putting up my own recipe for fried rice the “Naija way”. Fried rice is a favorite in many Nigerian occasions and events and is really easy and quick to prepare once you get a hang of it.I know that there are almost as many recipes out there for “Nigerian fried rice” as there are languages in Naija (Lol…not exactly so, but really, a lot of people prepare their fried rice with different methods).
As for me, I am more concerned with the end product; as long as the rice is tasty,not unnecessarily oily,the grains are separate and not hard to chew, then the method does not really matter.So here’s my recipe for making Nigerian fried rice, It has given me great results many times now and I hope it will do same for you:)

INGREDIENTS
- 2 cups of long grain rice (well washed)
- 1 cup mixed vegetables: carrots, long beans,green peas, sweet corn etc. (already chopped)
- 1 small onion (finely chopped or sliced)
- 2 cups beef broth or chicken broth
- 1/2 cup of vegetable/canola oil
- 2 seasoning cubes (knorr, maggi etc.)
- 1/2 cup cooked beef liver or sausage (diced)
- Salt, to taste
- 2 teaspoons curry
- 1/2 teaspoon dry thyme
METHOD
- Wash your rice thoroughly and parboil for 2 mins; drain excess water, rinse rice and set aside.
- In a medium pot, heat 1/4 cup oil; fry 1/2 of the chopped onions for 2 mins http://vhealthportal.com/product-category/anti-acidity/ (they should still be white/translucent and not browned); add parboiled rice and stir fry in with oil and onions for about 2 mins.
- Add two cups of beef or chicken broth; bring to the boil, seasoning cubes , curry, and some salt to taste; stir everything well with a wooden spoon, then cover the saucepan and let the rice cook for 15-20 mins on medium heat. (Check the rice occasionally to ensure it does not burn)
- Once the rice is cooked, turn it into another bowl or dish so that the rice grains do not stick together and form clumps.
- Heat up 1/4 cup vegetable oil in a large frying pan on medium heat; add the remaining chopped onions and fry for about 2 minutes or until translucent; add the mixed vegetables, liver or beef pieces & and some salt to taste. Stir the mixture properly and let it fry for about 2 more minutes. (I prefer that my vegetables have a crunchy taste)
- Add the rice into the vegetable mixture, stir properly making sure the vegetable mix is fully incorporated into the rice ; fry the rice for 2 more minutes on medium heat.You could add more curry powder at this stage, If you want to add more color and taste to the rice.
- Serve the fried rice hot with sides such as (fried/baked beef, chicken, or fish), fried plantains, salads etc

THINGS TO NOTE ABOUT NIGERIAN FRIED RICE
- Nigerian style fried rice can become rancid in a short period of time, so it is advisable that you eat it immediately after cooking or refrigerate it immediately after it has cooled down.
- Fried rice is enjoyed better when it is less oily,tender to taste, and the rice grains are separate (i.e they do not stick together)
