This coconut pineapple recipe is my favourite smoothie for a number of reasons; I just love the colour – yellow is such a cheery and bright colour that helps lighten moods. In addition, the smell of pineapple and coconut as a combo is so appealing to the senses. Finally, the taste is on another level of awesomeness – especially with a drizzle of honey. Then we must not forget the texture- smooth, and silky as it runs down your parched throat.
Oh, and before I forget, it is always a winner with the little ones. Children love it for most of the reasons that I mentioned earlier. A yellow smoothie is much more appealing than a green one – watch them take off in the opposite the direction when presented with a spinach or kale-based smoothie – it is always a sight to behold. Please remember to core your pineapple, because you would not want to feel the rough texture of the core. In addition, sweeter pineapples are always a better choice; try to avoid the sour tasting ones. So are you ready to blend away?
To core a pineapple means to take out the hard centre flesh of the fruit; this part would be rough to taste if blended in a smoothie

COCONUT PINEAPPLE SMOOTHIE RECIPE
INGREDIENTS
- 1 ripe banana (chopped into chunks)
- 1 cup fresh home-made coconut milk (please do not use canned coconut milk, it is not that healthy and you will not enjoy the taste of the smoothie) Click on the coloured text link on how to make homemade coconut milk by Kauna Kitchen.)
- 2 cups pineapple (cored and chopped; check out this video link in coloured text on coring a pineapple)
- 1 teaspoon honey, optional
- 4 medium ice cubes, optional
(If you want to enjoy your smoothie, freeze the fruits and liquids for a while before making the smoothie, that way, you will enjoy a cold and refreshing smoothie)
METHOD
- Pour the coconut milk into the blender, add the pineapple and banana and blend for about 10 seconds or more
- Add the ice cubes and blend for another 10 seconds or until the blend is smooth
- Serve in a cup and enjoy your smoothie.

Why do you always add bananas to everything. I hate bananas. I’m looking for a recipe that wont include that but still have the smooth feel.

I love bananas,that’s why I add them to most of my smoothies. 😊. If you want to get that smooth texture without banana you can substitute with fruits like mango, pear (less obvious taste) or avocado. You could also use yoghurt to get that smooth texture as well. I hope that helps.
