Baked sweet potato balls with a coconut crust. This recipe is really yummy and is so easy to make. I had some extra time this Saturday so I decided to make good use of my time in the kitchen. I had one sweet potato left in my potato basket and since it was not enough to make me a meal; I decided to make an appetizer instead.
I enjoyed making this mini-wonders and got to share it with some of my friends who loved it as well. It is really easy to make;has an array of different sweet tastes and is really tender on the tongue. It will be great for a party and could even be modified as a dessert. Lest I forget, it is also healthy (without the cheese and butter):)

INGREDIENTS
- 1 sweet potato (peeled and diced in water)
- 1 tablespoon of butter
- 1 teaspoon of shredded cheese (mozarella or parmesan)
- 1 tablespoon of chopped red onion
- 1/2 teaspoon of cinnamon
- 1 egg, whisked
- Shredded coconut flakes, to coat
- Breadcrumbs, to coat

DIRECTIONS
- Boil the sweet potato cubes for about 10-15 minutes or until it is cooked; drain the remaining water, leaving just enough to make the mashing easier . Do not over cook it; or else it will become too soft
- While the sweet potato is boiling, put the bread crumbs, coconut flakes, and whisked egg into separate bowls;set aside
- Once the sweet potato cubes are cooked; set aside or put in the fridge to cool for about 10minutes
- In a bowl, combine the sweet potato cubes, onions,pepper,cheese, and cinnamon; mash everything together properly
- Using CLEAN hands:); form little round balls with the sweet potato mixture (I got about 20 balls)
- Dip the first sweet potato ball into the egg mixture; then roll lighly in the breadcrumbs and then coconut flakes. Repeat this for all the balls
- Lightly coat a baking pan or foil pan with some butter or olive oil. Place the sweet potato balls on the pan.
- Bake in the oven at 350-400°F for about 15-20 minutes or until they are golden on the outside
You can serve this mini-yummies with any sauce that you prefer or eat them just like that. It is all a matter of mood and taste:)
