This plantain recipe is what I like to call “The Bole Revamp” with any stuffing of your choice and a generous shaving of moist, bubbly, sticky MOZZARELLA cheese – or whatever cheese tickles your fancy.
For those of you who don’t know, the word Bole with an accent on the e, stands for streetside grilled plantain; a roadside delicacy for the average Nigerian – however, I would like to exclude myself from this “Bole Lover” category. Honestly, I’ve tried but have still not been able to love or long for Bole as I’ve seen a number of people do. I have come to accept my fate; maybe the “bole loving” gene which skipped me will be passed down to my munchkins to come.
But my Bole woes aside, after discovering this recipe, I can now congratulate myself in a way; I’m eating what I like to call an African, French, American remix of Bole minus the roadside cooking with a generous topping of Mozzeralla cheese?
Look, I can’t shout the praises of this dish too much, you need to try it for yourself, then you’ll understand why this post seems to be my longest so far for the year.
Butter does dangerously decadent things to a finger of plantain; then there’s the juicy bacon bits that make your tastebuds do a jive as the sticky moist cheese tenderly swirls down your palette.

This bacon cheese stuffed plantains, have become a favourite for Saturday brunch at my home; usually served with a cold gass of my favorite Mango Banana smoothie.
When baking the plantains, make sure you give them a generous rub of butter all over; feel free to replace the bacon for any other meat/protein of your choice such as grounded beef or shredded chicken – but make sure its already cooked before stuffing it in the plantain. As for the cheese – GO GAGA and use as much as you love and the stuffing slit can take.
And finally garnish with a nice sprinkle of chopped fresh herbs. My favourite are parsely and basil.

BACON CHEESE STUFFED PLANTAINS RECIPE

INGREDIENTS
• 2 ripe plantains
• ½ cup butter, melted (100g)
• 3 to 6 slices
• 1 cup mozzarella cheese, grated, (100g)
• A handful fresh herbs, garnish
METHOD
- Pre-heat oven to 200°C (400°F).
- Remove the peel from the plantains.
- Cover in melted butter.
- Bake for 40mins; flipping over to another side after 20 minutes, then cooking other side for another 20 minutes until golden brown on both sides.
- Chop the bacon into bits and fry until crispy.
- Cut the cooked plantains down the middle to create a slit or pocket for the stuffing.
- Stuff with the mozzarella, bacon and extra mozzarella.
- Bake for another 5 minutes until the cheese has melted. (Please heed my advice on this one, use ONLY REAL cheese. If you use anything else that’s not the real thing, you’ll see it melt like candle wax and have wasted your precious time – learn from my mistake)
